Straw yellow in colour with steely glints. Has an intense aroma of grass, hay and white flower notes. Dense, warm and tasty in the mouth with a hint of ripe, acid fruits and a persistent after-taste that is slightly bitter and brings out the true character of the variety with its special aging process.

A region with a recent history of extensive wine production, since the 19th century. Its terrain is abrupt, and its 400-m high plateau has a limestone base with a largely clayey texture. The region has a Mediterranean climate, with hot summers and extremely cold winters with abundant wind, and rainfall of approximately 400 mts..

Only the Macabeo variety, which is overripe, and picked by hand.

production
|
Through the traditional cultivation of older vines, fermented separately. At the end of the process part of the white Garnacha is left to ferment in old oak casks, where it was aged with its own lees and beaten to achieve light aging notes.

aging
|
The cuvée process is carried out at the end of January and the wine is stored under cold conditions, to maintain its aroma and freshness, until mid March, when it is bottled.

Recommended as an accompaniment for white meats, fish casseroles and semi-cured and blue cheese

serving
|
It is advisable to serve at a temperature of between 7 and 9º C., after uncorking and/or decanting one hour before drinking.
