11 to 40 year old vines planted on one of Priorat's oldest vienyards. This vineyard is surrounded by Fites built during the 12th century by the monks of Scala Dei. Soil is pure Llicorella, typical soil of the DOQ Priorat.

vinification
|
After a selective manual harvest, the chosen grapes are placed in boxes and are refrigerated for 12 to 18 hours during the night. Once they are cold enough, the grapes are placed on a table of selection in order to remove any grape or any remaining grain that does not meet the desired quality for vinification (general aspect, skin quality, size, color, texture, sugar content, acidity etc..). After this (second) selection, the grapes are pressed and transfered in 300L brand new french oak barrels for the cold fermentation to begin.

fermentation and ageing
|
Both varieties of grapes used in the blend of Clos Les Fites Blanc are assembled prior to fermentation. Once assembled, the blend ferments in oak barrels at a controlled temperature of 14°C. The blend remains in the same barrel for 4 months. During all the ageing process, a weekly pumping over is performed. Once bottled, the wine is bottle-aged another two to three years in the cellar.

Powerful aromas that recell fresh, ripe white fruits (from White Grenache) combined with slight touches of spices (from Pedro Jiménez) and smoke notes.
Generous in mouth, elegant, with long lasting aromas.

Best to drink in 2009-2012. Decanting recommended. Serve at 15°-16°C.
