history
|
Marfil SEC is one of our white wines that has been sold worldwide for one hundred years. In the past, it used to be produced aged in large capacity wooden casks for more than three years, so Pansa Blanca acquired a very special personal bouquet which was highly valued during most of the XXth century.
In the last few decades, the market tendencies have gradually had an influence on the vinification techniques of this wine, and the ageing in wood slowly but surely disappeared, paving the way for and giving prominence to the fruit, Pansa Blanca, which, without losing its fullness on the palate, gained in primary freshness and aromas of fresh white, aniseed-flavoured and, in certain years, floral and sweeter fruit.

elaboration
|
The wine was aged in stainless steel tanks on its own fine lees from November to February in order to give the wine more lubrication and volume, and to prepare it to improve its evolution throughout time.
