wine making
|
The grapes were fermented separately for the four varieties: 3 weeks of skin contact for the Cariñena, 4 weeks for the garnacha, 2 weeks for the Cabernet and 3 weeks for the Merlot.
80% of the fruit is coming from hillside vineyards more than 50 years-old. The fermentation is carried out at a temperature of 28ºC (82ºF) with two daily pumpovers.
