Produced from a base of Red Grenache, Cabernet Sauvignon, and Merlot grapes, manually harvested and selected at the moment of optimum maturity. Vinification at the controlled temperature of 18 to 20 degrees using traditional methods of prolonged maceration, “délestage” and pumping over … to result in the perfect combination of polyphenols and polysaccharides., and conserving the aromas, the elements that give the wine its complex structure. Aged for 12 months in lightly toasted French Allier oak barrels, with a maximum of three vintages per barrel. This wine is less complex than GNEIS, produced by the same cellar, due to its shorter maceration time in barrel. It reaches a peak of elegance with less time in the bottle.

The name IO is composed of the letters of the exclamation used by the Bacchantes (Greek women who adored the god Bacchus, also known by the name Dionysus) to express their happiness, and also shouted by the crowds at triumphs and festivals.

tasting notes

Wine with a cherry color, conserving tones of violet. Very intense scents, combining wild red fruits with a lightly toasted barrel, maintaining its mineral personality. Meaty flavor at entry of the palate, with tannins well integrated and a good acidity that give it a persistent finish. The backbone of this wine is without a doubt the equilibrium of tannin-alcohol-polyphenols accompanied by a good pH.
