elaboration:
|
Once the harvest is finished, the wholesome grapes ripened by varieties are destemed to proceed to maceration and foliage fermentation.
The tasting will determine the duration of these processes.
Later the must is drawed off and stored in barrels to ferment and to be finally pressed.
Once the malolactic transformation is finished, the wine is kept in American oak barrels until its bottling (80% 12 months in oak barrels and 20% in stainless steel tanks).
No abrupt physical treatments have been used in the elaboration of this wine in order not to damage its steady evolution or preventing the sudden appearance of any natural precipitate. Therefore, proceed to its decanting and enjoy this fabulous wine.
